6 Reasons to Make Fall Resolutions!

We all love fall :)

Eating seasonally feels so celebratory, doesn’t it? The embracing of change and excitement of the new. It is starting to feel cooler here in NYC, and I’m adding layers and scarves and making sure to walk in the sun as much as possible (gotta soak up that vitamin D and save it for March!).

Fall is such an invigorating time! Where so many goals are set at the New Year, I always wonder why we don’t set goals in the fall instead.  After the Holidays I mostly want to curl up and hibernate, but in October when the leaves are vibrant and the air is freshly crisp and the produce is gorgeous, I’m ready to embrace new goals and dreams! You too?

Awareness comes first.  Maybe you don’t even remember what “good” feels like because “crappy and exhausted” is your baseline.  There is a biological origin for your symptoms, and they can be addressed and healed. It may seem impossible - but I promise that it is attainable! Sometimes, we just need better support to reach our goals, and better understanding of our bodies so we know how to nourish them well.

There is so much to be enjoyed!! This (healthy) pumpkin bread proves it :).

Made with warming spices, just the tiniest bit of sugar, and packed with fall-vegetable goodness (and flaxseed too!).  Perfect for teachers gifts, or for a friend, or just to keep all to yourself...

Pumpkin Bread 

  • 1 can organic pumpkin puree
  • 2 eggs
  • 4 tbsp salted butter
  • 2 tbsp brown sugar
  • 1/3 cup honey
  • 1 1/2 C whole wheat flour (substitute gluten free!)
  • 2 tbsp ground flaxseed
  • 1/2 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp cloves
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder

Preheat oven to 375 degrees, and grease a 8-by-4-inch loaf pan with cooking spray. In a high speed mixer, cream butter and brown sugar.  Add eggs one at a time and beat well.  Pour in honey and mix.

In a separate bowl, combine flour, baking soda, baking powder, and spices. Turn your mixer on low, and add the dry ingredients in three parts, mixing well after each addition. Finally, add pumpkin puree and mix until incorporated. Transfer into loaf pan and bake for 45-55 minutes - until a knife inserted into the center comes out clean.

Transfer to a wire rack or a cake stand to cool. Serve warm!

** to take this to the next level, make this into "cinnamon toast" by spreading butter on top or a generous slice, and sprinkling on some cinnamon and sugar.  Enjoy friends :).
