Fast, Amazing Meals, that are Easy!
You can keep yourself grounded and on track by having a handful of healthy meals you know you can always fall back on. It is good to remember that it is not what you eat some of the time, it’s what you eat ALL of the time that really makes an impact on your health. These meals are quick, nourishing/clean, comforting, and no stress. These meals connect you to that feeling of “home”, and make you feel like you are really taking care of yourself. (What meals are coming to mind as you read this???)
I call these meals “FAME Recipes”, because they are sure to go down in your own personal history as the most wonderful meals you eat. FAME recipes are different from falling into a rut, because they are not boring or lacking in creativity. Instead, they are foundation of your nutrition plan that you build the rest of your eating habits around. They inspire you to jump into more creative endeavors in the kitchen, because you know you won’t have to recreate the wheel every day! They help you to stand firmly in a healthy lifestyle that is not driven by trends or by others.

Here are a few of my FAME Recipies that are staples in my home!
Banana Muffins - for kids to grab and go on a busy morning, or to stash in their lunch box in a nut-free school zone, or as an afternoon snack.
Spicy Butternut Squash Soup
This easy winter soup is nutrient rich - add jalapenos for spice, garlic for flavor, and chili-roasted pumpkin seeds for plant protein. (Did you know that pumpkin seeds have more protein per pound than lentils, beans, or nuts? It's true!)
H + D Vegan Chili
THIS. Is the best veggie chili you will ever eat. It is so flavorful and hearty, that you will not even realize that the ground beef/turkey you are used to in your chili-meal has actually been replaced by red lentils!! Super sneaky :). My kids love it.
Kale + White Bean Salad
This is my go-to salad - perfect for a quick lunch on a busy work day, or a hearty side for dinner. It is so delicious, I could eat it every day of the week!! It crisp, clean, and satisfying.
Taste of Spain
This recipe for Cauliflower Bravas, Pork Chops with peach and scallion relish, and Basic Green Beans is the new addition to my weekly menu, that captures all the flavors of summer and tastes of Spain that my family loved. And some pretty epic Sangria too.
This has been a staple in my home for almost 10 years now! My kids have all grown up eating it, expanding the repertoire of flavors that they enjoy and fueling their bodies with nutrient rich foods that they now crave.
Of course, you love keeping up with the latest food trends. It is fun and invigorating to try something new. Part of your health journey is discovering the foods that make your body feel its best, and enjoying fresh new foods are part of that discovery! But keep in mind - when you are trying to form new healthy habits, or striving get your health back on track - you need foods in your diet that are consistent, stress free, and comforting so you don’t fall off the bandwagon when your schedule gets hectic or when you have a disappointing day.
